COFFEE STORY

Wet hulling, a process developed in Sumatra, is essential due to the region's humid climate, which makes drying green coffee challenging. Farmers depulp, ferment, and wash coffee cherries, then sell them partially dried to mills. The parchment is removed early, requiring careful handling to avoid damage. After milling, the seeds are dried to the desired moisture content. Coffee was introduced to Java in 1696 and thrived by 1699. Sumatran coffee is mainly grown by smallholders in highlands like Tapanuli and Gayo. Most undergo wet hulling, known as "giling basah". The region's diverse coffee plant species, including Bergandal and Catimor, contribute to its unique flavor profile. The combination of wet hulling and diverse plant species makes Sumatran coffee distinct and rich. Smallholders' careful processing and the region's ideal climate create a high-quality coffee sought after by many.
